My husband and I had such a fun date-day visiting an organic apple orchard in Mt. Hood, Oregon. We’ve been coming here for years, and the orchard has become a special place for us. There’s a kind gentleman who owns it; he started organic farming here many years ago with his wife and hasn’t stopped. We always have a good chat with him when we’re there. This time, he shared how challenging it is to keep the orchard going. If it weren’t for the weddings they host at their beautiful venue, he wouldn’t be able to make it. That’s so sad to me because places like this, where fruit isn’t sprayed and you can find it fresh in a packing house, are so rare. Even organic fruit in packing houses is often treated with antibacterial sprays. When you find unsprayed produce like this, it’s truly a rare gem!

We went home with more apples than we could handle because he was selling beautiful, organic Honeycrisps for only $0.75 a pound—amazing! I couldn’t resist buying a truckload (though my husband definitely questioned me on that 😉). But apples keep well in a cool space like our garage, so I’ll have plenty of time to use them, especially for this delicious apple butter recipe I’m sharing with you today!

My husband’s stepmom and I have a tradition of canning apple butter every year, and we’ve perfected our recipe over time. She’s an apple butter connoisseur who loves cinnamon, and together we’ve crafted a recipe with the perfect blend of spices. You’ll never turn to another apple butter recipe again! It has Ceylon cinnamon, cloves, fresh nutmeg, and cardamom, plus organic apple cider. You can use your sweetener of choice—we’ve tried honey and maple syrup, but this time, I used my favorite brand of unrefined cane sugar from Azure Standard. It’s organic, minimally processed, and doesn’t spike blood sugar like refined sugar. And, of course, the star of the recipe is the apples. I used Honeycrisps, but any sweet-tart apple variety will do!

Medicinal Benefits of Key Ingredients

Each ingredient in this organic apple butter canning recipe brings not only rich flavor but also valuable health benefits:

  • Apples: Loaded with antioxidants like quercetin and vitamin C, apples support heart health, immunity, and help reduce inflammation. Their natural pectin promotes digestion and helps regulate blood sugar levels.

And the canning recipe below is so easy! If you’ve never canned before, jams and fruit butters are the way to go! A water-bath canner will work just fine. If you’ve ever been intimidated by canning, this is the recipe for you! The one thing I will say is that the Ball Canning Cookbook is a must (and it’s what my canning instructions are based on). It’s like your “bible” for canning—so helpful! As long as you follow the recipe below (or the recipe in the Ball Canning book), you will be good to go.

Starting with fresh, orchard-picked apples, apple cider, warming spices, and unrefined organic sugar (or honey or maple syrup), this recipe will have you wanting to spread it on everything—from your morning toast to a cozy evening bowl of ice cream.

Ingredients

  • 6 lbs Organic Apples (Weigh before peeling & coring)
  • 2 cups Organic Apple Cider
  • 1 whole Lemon (Zested & Juiced)
  • 2 cups Organic Unrefined Sugar, Honey or Maple Syrup
  • 2 teaspoons Ceylon Cinnamon
  • 1 teaspoon Ground Cloves
  • 1 teaspoon Allspice
  • 3/4 teaspoon Sea Salt
  • 1/4 teaspoon Freshly Grated Nutmeg
  • 1/8 teaspoon Ground Cardamom

Instructions

  • Prepare Your Apples: Peel, core, slice (an apple slicer works great) & then cut the apple slices in half. Place them in a large pot with the apple cider and bring to a simmer. Cook until the apples are soft (about 30 min.).
  • Use an immersion blender or carefully transfer to a food processor / blender and blend until smooth. If canning, it's good to not have bigger pieces as the butter will not cook as evenly. Transfer back to the pot, if you did not use an immersion blender.
  • Add Sweeteners and Spices: Stir in the sugar (or sweetener of choice) and spices. Continue cooking the mixture on med-low heat, stirring often, until it reaches a thick, buttery consistency.
  • You can test using the spoon test: Dip the back of a spoon in the apple butter and run your finger down the center. If the clean line stays in place and the butter on either side of the line mostly stays in place without going into the line your drew, then your apple butter is done.
  • If you’re not canning your apple butter and plan to store it in the fridge, it will typically last up to 2 to 3 weeks. Be sure to store it in an airtight container to maintain its freshness. If you want it to last longer, you can freeze it, which can extend its shelf life to up to 6 months
  • IF CANNING: Prepare your canner with bring water to a rolling boil.
  • Wash your lids and bands with warm soapy water.
  • Bring a small pot to a simmer, place clean lids in simmer pot and turn off heat (this allow the lids to be more pliable for a better seal; however, you do not want to boil the lids as this could change their shape and prevent sealing).
  • Sterilize your jars in boiling water (or poor boiling water into your jars). Ladle the hot apple butter into the jars (a funnel is helpful here), leaving about 1/4 inch of space at the top.
  • Remove air bubbles with a knife or the tool that comes in this canning kit.
  • Wipe rim to remove any apple butter, which could prevent the jar from sealing.
  • Seal and Process: Place the lids on the jars (center) and screw down band until resistance is met, then increase to finger-tight.
  • Place jars in your canner (with lid on), ensuring they are completely covered with water. Bring back to boil and process for 10 minutes (wait until water comes back to a boil to start timer). Be sure to adjust time for altitude (for instance… we live at 2400 ft. and the Ball Canning Guidelines state to increase processing time by 5 minutes if you live anywhere from 1,001 – 3,000 ft. elevation… 3,001 – 6,000 ft. will need to add an extra 10 minutes – if you live above these elevations, please refer to the Ball Canning Guidelines)
  • Remove canner lid, wait 5 minutes, then remove your jars to a clean towel. It's not advisable to move your jars, unless they are in a place where they will get bumped or a lot of air flow is over them, until you hear the "popping" sound of joy! This means they have sealed; however, still best not to move them until have completely cooled. When storing, remove bands as bacteria can harbor under bands and they are not necessary for storing. Wipe jars clean and store in a cool, dry, place. They can last years this way!
