A Dream Blossoms into Reality
Spring is here, and with it comes new beginnings! I’m beyond excited to announce that The Blossoming Table, LLC is officially launched—my farm-to-table catering business in collaboration with Mugs Coffee! 🎉 This journey has been years in the making, from my nursing career to co-running a startup to now stepping into my passion for creating wholesome, organic food.

Spring is in the air! Well, at least on the meteorological calendar where we are. If April showers bring May flowers, then what is March supposed to do? 😉 I'm not really complaining (well, maybe just a little 😉). We truly need the rain, and honestly, even though I’m SO excited to start planting, the gloomy weather has been a blessing in disguise. It has given me the time to focus on something incredibly exciting—a dream that’s been tucked away in my heart for years.
Have you ever had a dream so deep in your bones that you just knew it was meant for you? For as long as I can remember, I’ve loved creating recipes. From making a mess in my parents' kitchen as a child to cooking and entertaining as a newlywed, food has always been a source of joy for me. It wasn’t until I threw a baby shower for a friend while working as a nurse that someone suggested I turn my love for food into a career. From that moment on, I dreamed of one day having my own catering company and restaurant.
But life—and God—had other plans.
When I left my career as a nurse, my husband and I took on a BIG project. His dream of living off-grid, inspired by his father, started as a small aquaponics design he showed me while we were dating. Little did I know where that idea would lead! That small vision turned into a full-blown startup where we grew and sold microgreens to pay for the startup project. I ran the operations while my husband continued working for a subsidiary of Boeing, eventually taking a leap of faith to leave his job at Insitu to design and build indoor grow systems full-time.
That little startup became Eden Grow Systems, and before I knew it, I was deeply involved in its marketing and social media. I learned SO much along the way, but deep down, I felt like my personal dream was on hold. Looking back now, I can see that God was pressing pause for a reason. I wouldn’t have been able to successfully run my own business without all the lessons I learned during that time.
Fast forward to last summer—Eden was facing struggles, and we both felt God pulling us in a new direction. I started sharing more of my passions online, using everything I had learned from Eden. Around the same time, I began making gluten-free treats for a friend’s coffee shop, Mugs Coffee in Bingen, WA. Angie, the owner, is an amazing person (if you're local, you’ve got to pay her a visit!). Through that partnership, I also started teaching workshops on medicinal cooking and sourdough baking at Mugs. One thing led to another, and before I knew it, we were discussing an even bigger collaboration.
So, after years of waiting, growing, and trusting God’s timing, I’m beyond excited to announce… I’ve officially launched The Blossoming Table, LLC—a farm-to-table catering company in collaboration with Mugs Coffee! 🎉
This is truly a dream come true! Just this week, I received my health department certification in the mail, making it official. Plus, I have had my first client, a local winery that I'm developing a flatbread menu for (Sourdough Thyme Flatbread with Strawberries & Edible Flowers, pictured above). I will be running my catering business out of Mugs Coffee, where they will provide their amazing locally roasted coffee at my events. And I finally get to live my passion— using God's creation as medicine & creating organic, farm-to-table food for our community.
