I’m bringing you a fun, nourishing, and oh-so-delicious pick-me-up! This Matcha Chia Seed Pudding is creamy, subtly sweet, and packed with superfood benefits that will leave you feeling energized and refreshed.


It's almost spring where we are and we keep getting little pieces of heaven with the warm sunshine. The temperatures are still in the 40's but I am soaking up every minute I can. Even though it is absolutely glorious, I know that we will still get waves of cold temperatures and cloudy days - Snow is in the forecast next week!

The spring temperatures give me energy but the fluctuations can leave me feeling tired, especially on the cloudy days. Which is why I believe God gave us some amazing mood boosters in His creation to help lift our spirits and nourish our bodies - like w/ this superpower green tea... Matcha!

I love a Matcha Latte, but I thought I would take it up a notch and add it to my new love - chia seed pudding. It's just hint of matcha, sweetened with a touch a honey, and the creaminess of the yogurt (I even use a dairy-free version, but feel free to use plain yogurt here), + the crunch of pistachios make for a delicious, pick-me-up treat for any season. You could of course add fresh berries here or granola, but I loved keeping it simple.

Matcha Chia Seed Pudding Recipe

Prep Time: 5 minutes
Chill Time: At least 2 hours or overnight
Servings: 2

Ingredients:

  • 3/4 cup whole canned coconut milk

  • 3/4 cup Forager organic dairy-free yogurt

  • 1 teaspoon matcha powder

  • 1 teaspoon honey (or maple syrup for a vegan option)

  • 1/4 cup chia seeds

  • Additional yogurt and chopped pistachios for topping

Instructions:

  1. In a medium bowl, whisk together the coconut milk, yogurt, matcha powder, and honey until smooth and well combined.

  2. Add the chia seeds to the mixture and stir thoroughly to ensure they're evenly distributed.

  3. Let the mixture sit for about 10 minutes, then stir again to prevent clumping.

  4. Cover the bowl and refrigerate for at least 2 hours or overnight, allowing the chia seeds to absorb the liquid and thicken into a pudding-like consistency.

  5. Before serving, give the pudding a good stir. Divide it into two servings, and top each with a dollop of yogurt, a drizzle of honey and a sprinkle of chopped pistachios (you can also layer it as I did in the photos for a pretty presentation)

  6. Enjoy!

Chef's Notes:

Sweetness: Adjust the amount of honey (or maple syrup) to your taste preferences. You can also add a pinch of stevia or another sweetener if desired.

Matcha Intensity: If you prefer a stronger matcha flavor, you can increase the amount of matcha powder to 1.5 teaspoons.

Liquid to Chia Seed Ratio: The ratio in this recipe creates a medium-thick pudding. If you prefer a thinner consistency, reduce the amount of chia seeds slightly.

Texture: If you dislike the slightly gelatinous texture of chia seeds, you can blend the mixture briefly with an immersion blender after chilling for a smoother texture. However, this is optional.

Make-Ahead: Chia seed pudding is an excellent make-ahead breakfast. It can be stored in the refrigerator for up to 5 days.

Customization: Get creative with your toppings! Try adding fresh berries, granola, shredded coconut, or a drizzle of nut butter.
