These bliss balls are exactly as described…a bite of bliss! They’re filled with creamy Sunbutter, healthy omega-3 from flaxseed and hemp hearts and 100% pure cacao butter adds a hint of white chocolate. The dates give these just the right amount of natural sweetness!
When I first bit into one of these bliss balls all I could think about were no-bake cookies! You know…the ones we made in middle school home economics (this may be aging me…do they still have home ec.??). I upped the ante with these just a bit by replacing the oats with coconut, adding in omega-3 power with hemp hearts and flaxseed! Omega 3’s can help with cardiovascular health, have anti-inflammatory properties and may even help your thinking skills! And to add an extra special touch they are covered in 100% cacao butter, not to be confused with coconut butter. Cacao butter comes from the cacao bean that makes chocolate! Cacao may actually help you feel happy due to the possibility of it boosting neurotransmitters and balancing hormones. It contains antioxidants that can help fight wrinkle-causing free-radicals and inflammation! How cool is that! Who Knew! From what I understand cacao butter and cocoa butter are pretty much the same thing except cocoa is heated at higher temps and more processed than cacao, which means fewer antioxidants. And 100% cacao is Whole30! See this article. They don’t mention cacao butter but I don’t see any reason why it would be any different. The reason it would NOT be Whole30 is if you have a sweet-treat-chocolate addiction, then I would steer clear of these during whole30 to give you a chance to hit the reset button on your not-so-healthy cravings and not trigger the chocolate monster! You can totally leave the cacao butter off too! They are great without it as well!
Ground pistachios and dried rose petals make them pretty! These would be the perfect little Valentines gift or treat for yourself:). In the middle of winter, it sure is nice to have a healthy snack that makes you feel good! I say anything that puts a smile on your face, even for a moment in your day, helps your overall health! In the Pacific Northwest, we are blessed to get four seasons. There’s something I love about every season. I look forward to the warm cozy fires in the winter, beautiful spring flowers, warm summer days, and I love the fall menu! I do have to admit that I get cold easy so I prefer the warm beautiful sunshine but my hubby sure knows how to make me happy with a blazing warm fire! I love the way wood heat warms your from the inside-out! We live close to a Mountain where we can get quite a bit of snow. I love the way the snow makes me feel like I don’t have to go anywhere, and have a great excuse to cozy up next to the fire. I think that’s what winter is supposed to be…a time of cozy rest. I need to remind myself of this and enjoy this season before the busyness of spring is here.

White Chocolate Sunbutter Bliss Balls {Whole30, Paleo, GF, Vegan}
Ingredients
- 1 cup pitted Medjool dates-about 8 Large *
- 3/4 cup coconut chips **
- 4 tbsp Sunbutter (any nut or seed butter of your choice will work!)
- 1 tbsp ground flaxseed
- 1 tbsp hemp hearts ***
- pinch of sea salt
- 1/2 cup cacao butter, wafers or chopped (different than coconut butter) ****
- Optional toppings: pistachios and dried rose petals. You could also use hemp hearts and dried culinary lavender.
Instructions
- Place dates in food processor with paddle attachment. Process on high until very finely chopped and comes together like a ball of dough.
- Add coconut chips, Sunbutter, flaxseed, hemp hearts, and salt to food processor and process until everything comes together, is very finely chopped and you can pinch the mixture between two fingers and it stays together well. Stop and scrape down sides of processor often to assure everything is getting mixed, especially stuff on the bottom. This may take a little while.
- Turn mixture out to a sheet of plastic wrap, form into one big ball and place in the fridge for 10 minutes.
- While the mixture is being refrigerated, melt the cacao butter in a small saucepan over low-to-medium heat until completely melted. It will look like a yellow oil. Don’t worry…it will harden in the fridge! Let melted cacao butter sit so has time to cool before use.
- If you want to top with pistachios and dried rose petals now would be good time to prep. Place small amount of pistachios in food processor and process until finely ground and place in small bowl. For dried roses petals crush with fingers into small/tiny pieces in small bowl.
- When 10 minutes are up, remove date mixture from fridge and form into about 1 inch balls.
- Place balls, one a time in slightly tipped saucepan with cacao butter. Use fork to roll around to assure melted cacao gets all over ball. Use the fork to life out of melted cacao butter and slightly shake off excess. Place on parchment or foil-lined cookie sheet. Then top with favorite toppings while still warm, before placing in freezer for 10 minutes to harden.
- Place finished bliss balls in fridge in an airtight to store up to a week. You can also freeze for up to a month. May need to pull out of freezer a bit to thaw before biting into. ENJOY!
These were great for after dinner snacks. A little rich, so only a few at a time….that’s probably a good thing too, otherwise they’d all be gone
